For Sophie Cossy, the cellar is a place where wine is revealed rather than made. After the vineyard and its observations comes the time to listen to the wine: to observe, taste, and understand the evolution of the juice rather than impose a direction. Fermentations take place naturally in barrels, without hurry, allowing each wine to develop at its own pace. Blending is deliberately delayed, giving each batch the time to fully express its potential before any decision is made.
- LET THE WINE SPEAK
This approach is based on gentle, minimal, and thoughtful interventions. No fining or filtration is used: the goal is to preserve the substance, vitality, and authenticity of the wine. Each vintage thus becomes a unique creation, shaped more by the year than by the desire to reproduce a model. Here, nature’s variations are not corrected but welcomed as the living expression of the terroir.
